China is a ndle paradise (天堂). The hme f wheaten fd (面食) acrss the wrld is China, and the hme f wheaten fd in China is Shanxi Prvince. As an American student, my first experience with ndles was in Shanxi when I was an exchange student.
Everyne knws ndles are the king f Shanxi fd. There are abut 300 kinds f ndles. Amng them, my favrite is the sliced ndles. Yu can eat a bwl f sliced ndles in almst every place f China. The sliced ndles are ne f the tp five ndles in China, with the ther fur being Hubei’s ht-and-dry ndles, Sichuan’s dandan ndles, Beijing’s fried sauce ndles and Henan’s stewed ndles.
Once in a restaurant, I rdered sliced ndles and I was lucky t see hw the ck made them frm the windw f the kitchen. I felt really surprised t see the ck shave (削) the ndles s quickly! When I tasted the ndles fr the first time, I felt super happy.
When I first learned t make sliced ndles, the mre I practiced, the harder it seemed. But later, when I gt the angle right, it became a lt easier. In fact, yu need a lt f skills if yu want t ck them. The first thing yu need t d is t make a dugh (面团). After that, let yur dugh rest fr 5 t 10 minutes. Then cut the ndles by running the knife up and dwn.
