The first time I ate Sichuan ht pt was in Changchun in nrtheastern China. I had nly been in China fr a week when Rui, my new Chinese friend, asked me, “Have yu ever had ht pt?”
“N, what is it?” I answered.
“It’s gd. Yu’ll like it. See yu tnight at 7?”
And s it was decided.
The ht pt restaurant was ppular in the city. We fund a table at the far end f a rm. Sn, a large ht pt arrived. The ht pt itself had tw sides. On ne side was a cludy white brth. The brth n the ther side was cvered with bright red il.
“Is that red pepper il?” I asked.
“Yes,” Rui answered.
“Yu shuld try it. If yu like spicy (辛辣的) fd, yu’ll really enjy it.” Rui picked up a thin slice f lamb with his chpsticks and then put it in the red brth. In secnds, it was cked, and he put it n my small plate.
“If it’s t spicy, yu can use this ther brth—it’s nt spicy at all because it desn’t have any pepper’s in it,” Rui pinted t the cludy white brth n the ther side f the pt
“N,” said, “this is fine.”
But it was mre than fine: It was spicy, muth-numbing, and amazing. I ate and ate until the restaurant was almst clsed. I just culdn’t get enugh f it.
Fr hundreds f years, millins f Chinese peple have felt the same way: They just can’t get enugh ht pt. It has always been their favurite fd.
What makes Sichuan ht pt different frm ther ht pts is the use f huajia. It is said that the spicy fd helps peple get thrugh Sichuan's ht and wet weather.
Nearly as famus as the Sichuan ht pt is the Beijing ht pt. The Beijing ht pt uses lamb and many f the same ingredients (配料) as the Sichuan ht pt, but has a lighter taste. The Nrtheast Chinese ht pt usually cntains prk and pickled cabbage, while the Guangdng ht pt uses a chicken r a fish brth, and is knwn fr its wide range f ingredients. In fact, while lamb ht pt is quite ppular, almst any kind f ingredient can be fund in ht pt cking. There are as many kinds f ht pts as there are cks.
In China, peple like t jke that there is n prblem that a ht pt can’t slve. The fire frm a ht pt can melt just abut any icy disagreement and warm just abut any heart. Over a ht pt, peple can talk and share nt just fd, but friendship. While the fd may sn be frgtten, these friendships stay with us frever. Even tday, when I think f ht pt, my friend Rui’s face immediately cmes t mind, and I remember all the gd times I spent with him.

Hw much sleep d we really need each night? While many wuld quickly say “eight hurs”, science nw tells us this isn’t a ne-size-fits-all answer. In fact, the amunt f sleep a persn requires t feel well-rested and functin effectively differs a lt. This difference isn’t abut persnal chice r habit; it largely depends n ur genes (基因).
Sme peple are brn with a genetic feature that makes them “natural shrt sleepers” r “tp sleepers”. They need nly fur t six hurs f sleep per night, yet they wake up feeling fresh and can perfrm at their best. This ability is a great advantage in tday’s busy wrld.
Fr ver 25 years, Dr. Ptacek and his research team have studied sleep patterns (模式) in mre than 100 families. At first, they fcused n “mrning larks” — peple wh naturally g t bed and wake up very early. Hwever, they nticed smething surprising: sme f these early risers did nt always g t bed early. Smetimes they stayed up late. This led t an imprtant discvery: certain families shwed characteristics f bth mrning larks and night wls (夜猫子). Researchers began t believe these peple might have a special feature called “natural shrt sleep”, allwing them t be active with very little rest.
S far, scientists have fund fur genes cnnected t this feature, thugh there are prbably mre. These genes are rare; studies shw that nly abut ne in a thusand peple is a true tp sleeper. Hwever, studying them ffers hpe fr everyne. It may help unlck the secrets f “sleep efficiency (效率)”. Interestingly, natural shrt sleepers ften reprt better health and shw greater mental strength in surveys cmpared t thse wh need mre sleep. Their ability t d well n less sleep suggests their sleep is f higher quality.
This brings us t a key questin: what is “sleep efficiency”? Recent studies are prviding clues. In ne experiment, when natural shrt sleep genes were put int mice with Alzheimer’s disease (阿尔茨海默症), the mice became mre resilient. Even thugh they had the disease, they did nt get sicker. Instead, they stayed active and shwed n signs f illness. This finding suggests that understanding this bilgy culd help treat nt nly brain diseases but als ther serius cnditins like diabetes, besity, and even sme cancers.
Dr. Ptacek describes the research as a large, unfinished puzzle. Each family that helps discver a related gene adds anther piece. We are still searching fr mre pieces t cmplete the picture.
Sleep fills abut ne-third f ur lives, yet much abut it remains a mystery. We knw it is imprtant fr helping ur bdy and mind refresh. If we can learn hw sleep efficiency wrks, it culd lead t majr imprvements in health fr all peple.
