it’s all abut the sharpness (锐利) f yur knife and yur speed f apprach.
After ver five millin years f use arund the wrld, nins still cause a prblem fr ur eyes due t a special
chemical. The chemical gives ff a sulphur-rich spray (富硫喷雾) when we cut an nin, which travels thrugh the
air and makes ur eyes water.
T study this spray, Crnell researchers first built a tl with different steel blades (钢制刀片). They then
painted nin pieces black t watch the shape change after cutting. Using a micrscpe, they measured the width f
the blade tips, ranging frm 5 t 200 millimetres. Then they started cutting the nins at speeds between 0.4 and 2
metres per secnd.
Their recrdings clearly shwed that sharper blades prduced fewer drps with less energy. The duller (钝的)
the blade, the easier it was t bend (使弯曲) the nin’s skin befre cutting. This bending stred energy, building
up pressure inside the vegetable until it cut pen — resulting in mre juice. In sme cases, the drps culd break
int smaller aersl particles (气溶胶颗粒), reaching speeds f abut 43 metres per secnd. As these particles flew
thrugh the air, they created a fine spray that was mre likely t make ur eyes tear. Meanwhile, faster cutting
