      During their analysis, the team identified the DNA frm a gat whse milk went int the cheeses, befre cmparing it with 185 previusly sequenced gat genes. The genetic prfile f the Xiahe gat was similar t that f gats belnging t ancient Eurasian Steppe peple, meaning the Xiahe may have learned cheese-making frm them.
      All the Xiahe cheeses wuld have been prduced by drying kefir, a milk-based drink made with bacteria (细菌) such as Lactbacillus kefiranfaciens. The team, therefre, sequenced the DNA f that ne bacterium and cmpared it with 15 mdern varieties in rder t identify its place within that species’ family tree.
