Dr Davis and his clleagues reprt that they have tracked dwn a type f wild cffee which is bth pleasant t taste and tlerant f higher temperatures.
Dr Davis, hwever, came acrss a paper written in 1834 by Gerge Dn, a Scttish scientist,which described a species frm warmer areas. Dn named it stenphylla, and wrte that it had a flavur superir t arabica’s, and it was farmed up until the 1920s, after which canephra, which had higher yields, tk ver. Stenphylla was then gradually frgtten.
The crucial questin was, was Dn's praise t its flavur justified? T find ut, Dr Davis arranged*a cmpetitin invlving 18 prfessinal cffee tasters wh assessed, in a blind cmparisn,a set f samples that included stenphylla, tw types f arabica and ne f canephra.
Stenphylla perfrmed well. It was rated as having higher fruitlike qualities than a Brazilian arabica and an Indnesian canephra, and als a mre favurable acid ity and mre cmplex flavur prfile, thugh slightly less desired than an Ethipian arabica. It had nearly the same bdy as the thers, and lacked an unpleasant, earthy bitterness fund in the Brazilian arabica and the Indnesian canephra. And a study published in Nature this week, byEdward Chang, a neursurgen at the University f Califrnia, San Francisc, describes just such a technique.
