Cecilia Chiang, whse San Francisc restaurant, the Mandarin, intrduced American diners in the 1960s t the richness and variety f authentic Chinese cuisine, died n Wednesday at her hme in San Francisc.
Ms. Chiang was nt a chef, nr was she a likely candidate t run a restaurant. She was brn near Shanghai in 1920 as the seventh daughter in a wealthy family. After her parents died, Cecilia managed the businesses' finances while still in her teens.
Ms. Chiang came t the United States frm China t flee the Japanese during Wrld War Ⅱ, traveling nearly 700 miles n ft. Once in San Francisc, she met tw Chinese acquaintances wh wanted t pen a restaurant. Ms. Chiang agreed t put up a huge depsit (存款). But when the tw wmen quit, Ms. Chiang fund that the depsit was nt refundable (可退还的). She tk a deep breath and decided t pen the restaurant herself. “I began t think that if I culd create a restaurant with Westernstyle service and the dishes that I was mst familiar with—the delicius fd f nrthern China—maybe my little restaurant wuld succeed,” she wrte in her bk.
The Mandarin, which was pened in 1962 as a 65seat restaurant, intrduced custmers t mainly Sichuan, Shanghai and Cantn dishes. The early days were difficult. But little by little, Chinese diners, and a few Americans, came regularly. Overnight the tables filled and became a huge success.
Ms. Chiang cntinued t wrk as a restaurant cnsultant int her 90s. “I think I changed what average peple knw abut Chinese fd,” Mrs. Chiang wrte. “They didn't knw China was such a big cuntry.”

It lked like all f their dreams wuld cme true. Fr the last blck, hwever, they didn't talk. Each began t suspect that the ther ne was silently adding t the list f things they culd buy.
They finally reached Amy's huse, but instead f ging inside, they walked arund the huse t the back prch. They pened the wallet and cunted the mney int piles f ten. The ttal was $2400 - mre mney than either f them had ever seen. Then they bth started talking at nce. Wh lst it?
