First, blanch 500g of pork ribs in boiling water for 5 minutes, then rinse them clean. Next, heat some oil in a pan and melt 5 pieces of rock sugar until they turn golden. Then, add the ribs, 3 slices of ginger, and 2 cloves of garlic, and stir-fry until the ribs are browned. After that, pour in 2 tablespoons of light soy sauce and 1 tablespoon of dark soy sauce, and stir well. Then, add enough water to cover the ribs, bring it to a boil, and turn down the heat to a simmer. Let it cook for 40 minutes, then add a pinch of salt and cook for 10 more minutes.
