It’s the first time that scientists have identified bilgical markers that can indicate higher r lwer intake f
the fds, which are linked t a number f health prblems, said Erikka Lftfield, a US Natinal Cancer Institute

She said it culd help us t understand mre abut the impact f these prducts n ur health. Ultra-prcessed
fds — like sugary cereals, sdas, chips, frzen pizzas and mre — are prducts created thrugh industrial
prcesses with ingredients such as additives, clrs and preservatives nt fund in hme kitchens.
Hwever, studying their health impacts is hard because it’s difficult t accurately track what peple eat.
Typical diet studies rely n asking peple what they ate during a certain perid. But such reprts are knwn t be
unreliable because peple dn’t remember everything they ate, r they dn’t recrd their diets accurately.
In this study, Lftfield and her clleagues examined existing data f mre than 1,000 lder US adults. Mre
than 700 f them had prvided bld and urine samples, as well as detailed dietary recall reprts, cllected ver a
year.
The scientists fund that hundreds f metablites — prducts f digestin and ther prcesses —
crrespnded t the percentage f energy a persn cnsumes frm ultra-prcessed fds. Frm thse, they devised
a system using 28 bld markers and up t 33 urine markers that reliably predicted ultra-prcessed fd intake in
peple cnsuming typical diets.
It’s still early research, but identifying bld and urine markers t predict cnsumptin f ultra-prcessed
fds is “a majr scientific advance,” said Dr. Dariush Mzaffarian frm Tufts University, wh was nt invlved in
the study. Lftfield said she hped t apply the tl t existing studies where bld and urine samples are available
t track, fr instance, the effect f cnsuming ultra-prcessed fds n cancer risk.
