Nutritin(营养学)is really tricky. It’s like a big puzzle with many pieces that scientists are still trying t put tgether. Peple wh wrry abut their diet want simple labels(标签)f ‘gd’ r ‘bad’ and clear advice t fllw, but the truth is much mre slippery than that.
The science abut fats and chlesterl (胆固醇) is ften cunterintuitive (违反直觉的). Even qualified dietitians can be cnfused by it. Sme diets that are suppsed t be healthy can actually make yur chlesterl g up. This can happen because nt eating enugh can mess with yur bdy’s hrmnes (激素).
T much fat in the diet has lng been knwn t be bad fr yur heart health. But, after decades f pinting fingers at all nn-vegetable fats, science has nw decisively changed its mind. The research starting in the 1950s, which claimed that eating fats wuld make yur chlesterl g up and lead t heart prblems, has been prved t be nt always true. What has been called the ‘French paradx’ by American scientists reflects the fact that in France —as in many ther cuntries—peple may have high chlesterl levels and high cnsumptin f saturated fats (饱和脂肪) but lw cases f heart disease. The fd industry smetimes helps make the advice that gvernments give abut eating healthy. They made a picture called the ‘Eatwell Plate’ t shw peple what t eat. But mst peple in the UK eat t much fat, and nw it’s mstly frm things like vegetable ils, nt frm animals.

After the Secnd Wrld War, Eurpe’s rapid ecnmic grwth led t a mre pen and fair sciety, with fewer class barriers (阶级壁垒) and less bvius class differences.
Changes in the structure (结构) f the middle class were particularly influential. In the1800s and early 1900s, the middle class was made up f business wners r prfessinals like lawyers and dctrs. Like Americans, Eurpeans bught husehld gds like washing machines and TVs using credit, which was made easier by installment purchasing. This, alng with better scial security, made them mre willing t take n debt.

A. Strng family cnnectins.
B. Expertise in managing prperty.
C. Wrking in a large rganizatins.
