Beejhy Barhany, grwing up in an Ethipian-Jewish cmmunity in Israel, has been cking fr her family as lng as she can remember. Nw a chef and wner f Tsin Café in Harlem, New Yrk, Barhany cntinues t pull frm cking traditins, including ne that has becme the surce f much cntrversy in recent decades: washing raw meat befre cking.
Fr Barhany, submerging raw chicken in salt and lemn water is bth functinal and ceremnial, as saking r rinsing raw meat in salt water and acid-such as lemn juice r vinegar-is a cmmn frm f “washing” required by Jewish Ksher rules. And a 2015. survey f ver 1, 500 American cnsumers fund that nearly 70 percent rinse r wash their pultry befre cking it, thugh the U. S. Department f Agriculture( USDA) started telling cnsumers nt t wash raw pultry in the 1990s. Experts including thse frm the Centers fr Disease Cntrl and Preventin strngly warned that rather than reducing the risk f fdbrne illness (食源性疾病), washing meat increases the likelihd f spreading unwanted pathgens (病原体), like salmnella and campylbacter, arund the kitchen.
“Washing meat befre cking is nt really helping,” says Betty Feng, assciate prfessr f fd science at Purdue University. “The nly thing it des is splashing (飞溅) and culd crss-cntaminate a lt f yur kitchen items-yur sink, prbably yur clthes, whatever yu have by the sink.” Mrever, Feng cautins against using saltwater, vinegar, r lemn juice, which simply isn’t strng enugh t effectively kill fdbrne pathgens. “If the acidity is high enugh t kill bacteria, then it’s nt really likely yu can use yur bare hand t wash,” she says.
And a 2022 study shwed that submerging meat in a bwl f water reduced the splashing but nt the spread f germs. “I wuld treat the entire sink just like the utside f the chicken——it’s a bilgical hazard,” says Benjamin Chapman, ne f the study authrs and assciate prfessr in Nrth Carlina State University’s agricultural and human sciences department. “The way that we make meat safe is thrugh cking, nt thrugh the remval f pathgens.”

In America, the “Big Dig”, a highway prject that resulted in a mess f traffic in the centre f Bstn fr years, came in five times ver its initial budget. Even the Germans get huge prjects wrng. Cnceptin t peratin f Berlin Brandenburg Airprt has taken 30 years, with seven missed pening dates. The airprt ended up csting $8.2 billin. Hwever, the riginal estimate was abut $2.7 billin.
Huge prjects like Berlin Brandenburg Airprt are the subject f an amusing new bk called Hw Big Things Get Dne by Bent Flyvbjerg and Dan Gardner. Mr. Flyvbjerg sets up a database f ver 16, 000 prjects and data analysis reveals that nly 8.5% f the prjects meet their initial estimates n cst and time, and 0.5% f them achieve what they set ut t d n cst, time and benefits.
Over-ptimistic time and cst estimates riginate frm bth psychlgical and plitical perceptins: the reliance n intuitin (直觉) rather than data, and a prblem that Mr. Flyvbjerg calls “strategic misrepresentatin”. This is when budgets are intentinally reduced in rder t get things ging. And nce the prjects are under way, they will nt be stpped, because mney spent n them will thus be wasted.
Mr. Flyvbjerg speaks highly f Pixar’s methdical apprach t develping and testing films in great detail befre they g int prductin. He als tells the stry f hw Frank Gehry’s well-develped architectural mdels helped ensure the success f the Guggenheim Museum in Bilba. Narrwing dwn the prducing windw f a prject befre it is actually carried ut reduces the prbability f unexpected events.
Big custmized prjects are particularly likely t run int truble. Hwever, the mre a prject can be divided int standardized prcesses, the better its prspects are. Prjects run int prblems fr specific reasns as well as general nes: Britain’s truble is nt smething that China has t wrry abut, fr instance. But the irn law is that if yu plan strictly and standardize where pssible, yu are less likely t dig yurself int a hle.

C.Mst prjects suffer verspending and delays.
D.Mst prjects lack cmprehensive data analysis.
30.What is paragraph 3 mainly abut?
    A.Failures in decisin-making.B.Methds f reducing massive csts.
C.Strategies fr getting wrk dne.D.Reasns behind inaccurate estimates.
31.What is the key t preventing prjects getting int truble?
    A.Planning thrughly in advance.
    B.Analyzing specific and general reasns.
    C.Fcusing n efficiency f prjects.

If yu lk at the dynamic “Glbal Temperatures” map n NASA’s website, yu can see the histric temperature change ver time acrss the planet as the timeline ges frm 1880 t the mdern day. That is already happening with peple using electric cars and ther green technlgies. At the same time, we als need t find ways t predict the risk f natural disasters ahead f time,” said Erich Fischer.

    第三部分 语言运用(共两节,满分30分)
    第一节(共15小题:每小题1分,满分15分)
    阅读下面短文,从每题所给的A、B、C、D四个选项中选出可以填入空白处的最佳选项。
The prevalence (普遍) f sweatshp (血汗工厂) labr depends largely n the definitin being used. At its mst 41 definitin, the term refers t wrk in a cnfined space (small, surrunded by walls) that is extremely difficult r dangerus. Sweatshps are cnsidered t be fairly cmmn. If the definitin being used is clsely related t the cmmnly-held 42 f a factry with verwrked, under-paid wrkers, sweatshp labr becmes less cmmn than expected. 43 , they are still prevalent in third-wrld cuntries. Accrding t the United States Gvernment Accuntability Office, a sweatshp is any wrkplace that breaks ne r mre state and federal 44 laws. Experts believe that rughly 50 percent f manufacturers— 45 in the clthing industry — emply sweatshp labr.
It can be 46 t figure ut the exact number f sweatshps in a particular area. These wrkplaces usually, if nt always, vilate labr laws. Vilatins can include wrkers being paid less than minimum wage, child labr, and the severe lack f safety regulatins. 47 , many f these lcatins tend t hide their identities as sweatshps thrugh a number f different means. Fr example, they might bribe gvernment fficials.
Anther factr that 48 the prevalence f sweatshp labr is the ecnmic situatin in the cuntry r regin. Many individuals chse t wrk in sweatshps simply because there are n better alternatives 49 livelihd (生计), even if the incme they’re being given still cannt supprt their basic standards f living. This has led t a sharper increase in sweatshps in third-wrld ecnmies. In these cuntries, there is a 50 advantage t wrking in a sweatshp rather than nt wrking at all. 51 , the large number f peple willing t wrk under such cnditins causes emplyers t run mre sweatshps.
Certain ecnmists argue against the ppular pinin that sweatshp labr shuld be cnsidered 52 . Sweatshp supprters argue that the wrkplaces are a necessity fr pr cuntries. Sweatshp wrkers actually earn mre than average in thse cuntries. Fllwing this train f thught, sweatshps are lked upn as an ecnmic stimulus (刺激物). Emplyers fllwing this belief are 53 t increase the number f sweatshps in prer cuntries.
Hwever, ther experts think that 54 labr standards in third-wrld cuntries creates a dwnward spiral (螺旋线). That is t say, peple will be frced t accept wrking in increasingly wrsening circumstances. The demand fr wrk is significantly larger than the number f jbs that are available. It’s quite 55 fr wages and emplyee rights t cntinue ging dwnwards in respnse t such desperatin. As a result f the ecnmic circumstances in a given regin, emplyers wh fllw this philsphy are quick t pint ut that their businesses d nt fall under the definitin f a sweatshp.
