Most tourists who visit China get to know the spicy red hot flavors of Sichuan cuisine since it is a tourist favorite. But in Hunan Province, the food is maybe even hotter.

The many different tastes of the food partly stem from an unusually wide variety of agricultural products. For example, several kinds of chili peppers are grown. A common saying goes like this: “Sichuan people don't fear hot food, Hunan people don’t fear any degree of spiciness at all, and Guizhou people fear to eat food that isn’t spicy.” The Hunanese use vinegar with the pepper. It serves to stimulate the taste buds and make them tingle (受到刺激) , so you can better perceive the wide range of flavors and the rich variety of ingredients and spices.
Why Such Hot (and Sour) Food?
Perhaps the wet hot summers and chilly wet winters drive the people to eat sour hot foods. The Hunanese think that extra heat (yang) of peppers and other hot spices balances out the excessive cold and wet (yin) . Vinegar also packs yang, and along with helping with digestion, you’ll find that it helps cool (yin) your body on hot days.

On 25 January each year, the national poet of Scotland, Robert Burns, is celebrated. Burns, born in 1759, became famous at the age of 25. His poetry went on to become famous around the world.
The poet died in 1796, aged just 37. Burns Night began five years later when his friends gathered on what would have been his birthday, to celebrate his life. The evening was held at Burns's former home, with events that are now traditions. These include a feast, where someone reads Burns's famous poem Address to a Haggis(a kind of sausage). After supper there are poetry readings, Scottish dancing and singing, including Burns's song Auld Lang Syne.
This year, Burns Night was a bit different because of the spread of COVID-19. In Alloway, Scotland, a local radio presenter hosted a live webcast, The Burns Night In, at the house where Robert Burns was born. People across the world just enjoyed talks about the poet and Scottish music.
The Centre for Robert Burns Studies at the University of Glasgow invited 2 500 clubs, schools, and universities in 150 countries to share their plans for Burns Night on social media. They used the information to make a map of the celebrations which stretched from Antarctica to South Korea.
"He's a poet who travels very well," said Pauline Mackay, a leading professor at Glasgow University. "He could write very seriously, but also with great humour," she explained, adding that the song Auld Lang Syne is all about friendship and unity.
In a slightly more unusual celebration, a Scottish butcher posted a short video online in which he attached a haggis to a weather balloon, flying to the edge of space. "After a year like no other, we wanted to kick off 2021 by lifting the spirits of the general public," he said.

Social network Facebook has announced that it is pausing work on Instagram Kids, a young people’s version of Instagram, the photo and video-sharing app that Facebook owns. Instagram Kids would have been for 10 to 12-year-olds, who cannot officially use Instagram because it has an age limit of 13.
However, Facebook has recently been criticized for the effect that Instagram can have on teenagers’ mental health, and in particular how girls feel about their bodies.
Facebook has since published its own research which suggests that Instagram more often has a positive effect. However, the criticism has made the company decide that now is a bad time to develop the app for people who are younger than teenagers.
Adam Mosseri, the boss of the Instagram, said that this would give the company time to listen to and work with parents, experts, public officials and politicians and to show that Instagram Kids would take into account concerns around the mental health and wellbeing of its users.
Instagram Kids has not been completely cancelled, but if it is eventually launched in the future, you’ll need a parent or guardian’s permission to sign up. There will be no advertisements and you will only be able to access “age-appropriate” photos and videos.
Mosseri said that he understood people’s worries about the project and that these steps should help the company to get things right. However, several US politicians have called on Instagram not to restart work on the app. “A pause is not enough,” said a statement from four politicians who are keenly opposed to Instagram Kids. “Facebook has completely given up the benefit of the doubt when it comes to protecting young people online and it must completely abandon this project,” the statement said.

A robot space mission has successfully brought samples of rocks and soil from the Moon back to Earth for the first time since the 1970s. The capsule from China’s Chang’e mission landed in Inner Mongolia in December 2020, carrying with it around two kilograms of Moon material.
The unmanned Chang’e-5 spacecraft was launched in November 2020. After a 250,000-mile journey to the Moon, it entered orbit and released a small landing vehicle that fell towards the surface. Using rockets to slow its speed, the lander made a soft landing on a 1,300-metre volcanic hill called Mons Rumker, in an area called the Ocean of Storms.
The lander used a scoop (铲) and a drill fitted to a robot arm to tunnel two meters into the ground, collecting samples of rock and soil. It then blasted off from the surface, returned to the main spacecraft and automatically transferred its samples, ready for the journey back to Earth.
This is the first time in nearly 45 years that a spacecraft has got Moon rocks back. Most of the Moon material we have on Earth was brought back by astronauts during the US Apollo missions of the late 1960s and early 1970s. A little more came with robot landers from the Soviet Union (a country composed of Russia and its nearby neighbors) around the same time. The new samples are thought to be around 1.3 billion years old and have been taken to China’s capital, Beijing, for study. It’s hoped that they will allow scientists to work out more accurately the age of the Moon and other solar system objects. Xiao Long, an expert in space rocks at China’s University of Geosciences, said that the samples could “rewrite the history of the Moon”.
