What is America’s mst ppular Chinese dish? And what can the dish tell us abut Americans?
Certainly, in many ways this seems t be true. Chinese cuisine is a case in pint. Prir t cming t China, my nly experience with Chinese cking was in America, with Chinese fd that had been changed t suit American tastes. Fr example, America’s mst ppular Chinese dish is General Ts’s chicken, which cnsists f fried chicken cvered in a sweet sauce, flavured with ht red peppers. This is prbably nt an authentic Chinese recipe, hwever, s it cannt tell us much abut the Chinese. On the ther hand, it des tell us a lt abut Americans. It tells us, fr example, that Americans lve bld, simple flavurs. And, since the dish was als invented recently, it tells us that Americans are nt afraid t try new fds.

When intrduced t America, it 2 (change) t suit American tastes, which tells us Americans like trying new fds. Later, I visited China and 3 (experience) authentic Chinese fd. In Beijing, we ate in a restaurant where the chef treated us t dinner 4 (cnsist) f Sichuan peppercrns. It was wnderful but what was even mre imprtant was the friendship. In Shandng Prvince, we had 5 (bil) dumplings with vinegar. I fund making dumplings is always an affair with the whle family. In Suth China and central China, I experienced lcal dishes frm Guangdng’s elegant dim sum t the 6 (exceptin) stewed ndles in Henan. Thrugh fd, Chinese peple everywhere shw friendship and kindness.
