Chicken is America’s mst ppular meat. Many peple assume chicken fllws a simple rule-f-thumb: Pink chicken turned white means “dne.” It’s similar t hw we ck ther meats. But is this true? T study hw cks at hme fllw safety recmmendatins, researchers filmed 75 husehlds in five Eurpean cuntries. Frm a randm but nnrepresentative sample, they als cnducted an nline survey f nearly 4,000 husehlds in the same cuntries that say they ck chicken.
Wrried that chicken wuld dry ut, mst hme cks determined dneness by clr and texture (口感) inside the meat, they fund. Few bthered with thermmeters (温度计), claiming they tk t much time, were t cmplicated t use, didn’t fit in the chicken r weren’t necessary (althugh easy-t-use thermmeters are inexpensive and widely available).
In additinal lab experiments, the scientists injected raw chicken breast with bacteria (细菌), which cause millins f sicknesses, thusands f hspitalizatins and hundreds f deaths each year in the United States. They cked the breasts until they reached cre temperatures ranging frm 122 t 158 Fahrenheit, and they discvered smething surprising. At 158 degrees, but nt lwer, bacteria inside the chickens’ cres was reduced t safe levels, and when cut pen its flesh appeared dull and fibrus, nt shiny like raw chicken. But meat began changing frm pink t white far belw this, and mst clr change ccurred belw 131 degrees Fahrenheit. Smetimes, the chicken’s cre wuld be safely cked, but unsafe levels f bacteria still existed n surfaces that hadn’t tuched the grill plate.

Dr. Brun Gussault, a scientist and chef, recmmends buying and cking breasts and legs separately. Bring the breast’s cre t 165 degrees Fahrenheit, he said, and the leg t between 168.8 and 172.4 Fahrenheit. By the time it pps, the breasts will have lng cked. They will likely be dry and far frm his standards f culinary (烹饪的) perfectin.
