Wuyi Rock Tea is a kind of Oolong tea. The tea trees grow in Wuyi Mountain in Fujian province, so it gets this name. And the traditional home of Rock Tea is only from a small area in the mountain. In 2006, the government added the skills of making Wuyi Rock Tea to a list, which meant they would be protected by more people around the country. Richard Yu is a master of making Wuyi Rock Tea. In 1980, he started learning the skills. But it was a big challenge. In 1990, he could finally make the tea by himself. There are 13 steps to make it, including shaking, drying and cooking. Shaking was the most difficult. It requires Yu to know when to stop shaking based on the color. But this needs patience and experience. Sometimes he stops after shaking several times, while sometimes it can be hundreds of times. With three main processes, it usually takes more than 20 hours! Each process needs temperatures from 125 to 155°C. Tea makers have to keep a close eye on it and turn over the leaves every 50 minutes, or it might burn.
