When I was 17, I read a magazine article about a museum called the McNay, once the home of a watercolorist named Marian McNay. She had requested the community to turn it into a museum upon her death. On a sunny Saturday, Sally and I drove over to the museum. She asked, "Do you have the address? ""No, but I’ll recognize it, there was a picture in the magazine. "

The museum was free. We entered, excited. A group of people sitting in the hall stopped talking and stared at us.

Diet containing lots of salt can contribute to increased levels of stress, a new study shows. Scientists found in studies of mice that a high-salt diet increased the levels of a stress hormone by 75 per cent. Experts hope the findings will encourage a review of public health policy around salt consumption, aiming at manufacturers reducing the amount of salt in processed food.
The recommended salt intake for adults is less than six grams a day but most people regularly eat about nine grams. This can contribute to higher blood pressure, which increases the risks of heart attacks, strokes and dementia.
While effects on the heart and circulatory(循环) system have been ascertained, little was known about the impact of a high-salt diet on a person’s behaviour. To study this, experts from the University of Edinburgh used mice, who ordinarily have a low-salt diet, and gave them high-salt food to reflect the typical intake of humans.
They found that not only did resting stress hormone levels increase, but the mice’s hormone response to environmental stress was double that of mice that had a normal diet. Salt intake increased the activity of genes that produce the proteins in the brain which control how the body responds to stress.
Experts say further studies are already underway to understand if a high-salt intake leads to other behavioural changes such as anxiety and aggression. Matthew Bailey, professor of Renal Physiology at the University of Edinburgh’s Centre for Cardiovascular Science, said: “We are what we eat and understanding how high-salt food changes our mental health is an important step to improving wellbeing. We know that eating too much salt damages our heart, blood vessels(血管) and kidneys. This study now tells us that high salt in our food also changes the way our brain handles stress.”

It’s true that our ability to pick up new skills declines with age, but using a specific type of mindset—effectively holding on to a beginner’s mind—can help you learn new tricks and skills effectively as an adult.
You may still wonder why you should make the effort, but best-selling author Tom Vanderbilt points out that there are many general benefits of learning any new skill—including some long-term brain changes that could reduce some of the mental decline that often comes with ageing.
Interestingly, the benefits here seem to come from trying out multiple skills, rather than focusing on one particular expertise. As Vanderbilt writes in his book: “Rather than running a marathon mechanically, you are putting your brain through a variety of high-intensity interval workouts. Each time you begin to learn that new skill, you’re reshaping yourself. You’re training your brain again to be more efficient.”
The lifelong pursuit of many different interests may even increase your creativity. As David Epstein also noted in his book, Nobel laureates were many times more likely to have enjoyed artistic pursuits such as music, dance, visual art or creative writing than other scientists.
As you set about learning a new skill, there will be frustrations and moments of failure—but these may in fact be the most important experiences of the whole process. After years of experience in journalism, Vanderbilt says that the new challenges were a welcome change to his “professional complacency (专业成就感)”. “It sort of opened my mind and brought me back to this sense of not knowing,” he says. “The learning of the thing itself was often different from what I imagined. My expectations were constantly being upset.”
Plentiful research has shown that intellectual humility——the capacity to recognize the limits of our knowledge——can powerfully improve our thinking and decision making. And it may be increasingly important in today’s rapidly changing world. Whether we are learning for pleasure or attempting to boost our professional skills, we could all do well to develop that “beginner’s mindset”, where nothing is certain, and there is everything to learn.

But as soon as I stepped on the ice, I stumbled over myself. I found it difficult to learn skating. Although I practiced again and again, and fell again and again, when I thought of the athletes on the field, I didn’t give up. Soon I could skate quite well. I’m proud of myself.
From learning skating, I know while doing anything, we often meet many kinds of difficulties, but we shouldn’t lose heart. Instead, we should try our best to overcome them.

Upon seeing me, Ink Spot jumped off the window, running towards me in a flash. A flood of excitement passed through my body. I immediately picked him up and held him close as he rubbed beneath my chin, purring loudly. Seeing my cat well taken care of, I realized I had misunderstood my caring neighbor. Now my anger gave way to gratitude. I thanked her again and again before I took Ink Spot home, where I thought he should belong. The lost and found companion made me feel I was someone again.
