Winemaker Justin Jarrett remembers when the grape harvest used t start. He and his wife Pip, used t take their kids n an annual beach hliday in February. When they returned t their vineyards (葡萄园) in the reginal New Suth Wales city f Orange, Australia, in early autumn, they'd start the harvest. Tday, harvest starts six weeks earlier in January.
"What we did 20 years ag can't wrk tday," Jarrett says. "Yu have t adjust."
Scientists used t have big debates abut hw t talk t farmers abut climate change, says Snw Barlw, a prfessr specialising in viticulture at the University f Melbume. But recently there’s been a sea change. "Farmers are nw saying ' This is serius and we want t get n with ding things," he says.
"Wine is a classical industry that has been very influenced by climate," Barlw says. "Yu grw grapes in particular areas because yu think it's the ideal place t grw a particular grape t create the perfect wine."
Rising temperatures are nt just affecting harvest times, but als the types f grapes that grw well in particular areas. Majr labels, such as Brwn Brthers, have mved sme f their peratins t the suthern state f Tasmania where there are cler sites fr varieties such as chardnnay and pint nir. Others are changing their varietal mix, intrducing grapes frm suthern Italy, Sicily and Greece that are mre heat- tlerant.
The Jarretts have spent years adapting their winemaking business fr a warmer wrld. They've invested in infrastructure, help them manage the cmpressed (缩短的) harvest time, and intrduced mre sustainable sil and pest (害虫) management practices.

Winemaker Justin Jarrett remembers when the grape harvest used t start. He and his wife Pip, used t take their kids n an annual beach hliday in February. When they returned t their vineyards (葡萄园) in the reginal New Suth Wales city f Orange, Australia, in early autumn, they'd start the harvest. Tday, harvest starts six weeks earlier in January.
"What we did 20 years ag can't wrk tday," Jarrett says. "Yu have t adjust."
Scientists used t have big debates abut hw t talk t farmers abut climate change, says Snw Barlw, a prfessr specialising in viticulture at the University f Melbume. But recently there’s been a sea change. "Farmers are nw saying ' This is serius and we want t get n with ding things," he says.
"Wine is a classical industry that has been very influenced by climate," Barlw says. "Yu grw grapes in particular areas because yu think it's the ideal place t grw a particular grape t create the perfect wine."
Rising temperatures are nt just affecting harvest times, but als the types f grapes that grw well in particular areas. Majr labels, such as Brwn Brthers, have mved sme f their peratins t the suthern state f Tasmania where there are cler sites fr varieties such as chardnnay and pint nir. Others are changing their varietal mix, intrducing grapes frm suthern Italy, Sicily and Greece that are mre heat- tlerant.
The Jarretts have spent years adapting their winemaking business fr a warmer wrld. They've invested in infrastructure, help them manage the cmpressed (缩短的) harvest time, and intrduced mre sustainable sil and pest (害虫) management practices.
Jarrett is grwing their grape varieties at higher elevatins (海拔高度) than he used t. Sauvignn blanc, fr instance, which he used t grw at 700m, has been mved up t 900m. He thinks he can keep mving his peratins up t abut 1100m befre he has t buy mre land.
