High in the muntains f Yunnan, China, there is a special kind f mnkey called the Yunnan snub-nsed mnkey. It is als knwn as the “snw muntain elf (精灵)”. These mnkeys are very rare, s we need t prtect them.
▲ One f them is Yu Jianhua. Althugh he is 70 years ld, he still walks in the muntains every day. Interestingly, when he was yung, he used t be a hunter. But when he turned 45, he decided t stp hunting and began prtecting the mnkeys instead. Later, his sn, Yu Zhnghua, jined him. The Yu family have been prtecting the mnkeys fr mre than 30 years.

Steps
First, cut the chicken int small pieces. Put them int a large bwl and pur sme water int it. Wash the chicken with yur hands. Then, cut the dried peppers, ginger, garlic and green nins int small pieces.
Next, put the chicken int a bwl. Add seasnings (调味品): 1 spn f salt, 1/2 cup f cking wine, 1 spn f sauce, sme ginger and green nins. Mix them fr at least half an hur.
After that, pur 3 spns f il int a pt. When the il is ht, add the chicken pieces and stir-fry ver high heat until the chicken changes clr. Then, take the chicken ut and set it aside.
Then, put the dried peppers int the pt and use high heat t fry fr 30 secnds. Pur the chicken int the pt again and cntinue stir-frying fr a few minutes. Then add sme salt and sauce int the pt. Finally, place the chicken nt a plate and let yur family r friends have a taste.
