Making Everything Sweet
Japanese scientists have develped a special kind f tmat. It can change an eater’s sense f taste, says a reprt in Science News. Fr abut an hur after a persn eats ne f the tmates, sur fds taste sweet.
Say yu eat ne f the tmates befre lunch. Then yu take a bite f a lemn. Yu will find that the lemn tastes like super-sweet lemnade.
Hw magical is that! The key ingredient (成分) in the taste-changing tmates is “miraculin.” Miraculin is fund in berries that grw in West Africa. These fruits are smetimes sld as “Miracle Fruit” berries.
Peple have lng knwn abut the ability f miracle berries t change taste. In sme cuntries, the berries are used as a way t help peple lse weight. Fr example, a dieter can eat a berry and then eat lw-calrie sur fds that will taste wnderfully sweet.
Scientists fund miraculin in the miracle berry in 1968. Since then, peple have wndered hw t manufacture it. One way culd be t harvest the berries. The prblem was that if demand gt t large, the berry plants culd be driven t extinctin.
That’s where the Japanese scientists came in. Prfessr Kazuhisa Kat and his team at the University f Tsukuba studied the DNA f the miracle berry. They fund a gene that cntains the instructins fr hw t make miraculin.
Kat and ther researchers put the gene fr miraculin int the DNA f a tmat. As a result, the tmates started t make miraculin. Thse tmates had just as much miraculin as miracle berries d. These “miracle” tmates culd be grwn in large numbers. If scientists can grw ther fds with miraculin inside, then there wn’t be any need t harvest all the miracle berries.
The researchers dn’t knw yet hw the tmat-based miraculin can be used. Perhaps it culd be sld as a dieting fd, t be taken befre meals.
