        Not long ago, my 12-year-old son, Lucian, and I were standing on the Knife's edge. I mean this quite literally. We had just completed a four-day hike in Maine that concluded by climbing Mount Katahdin. At its highest peak, Mount Katahdin has an extremely dramatic, mile-long ridge(山脊) known as the Knife Edge. It's scary and quite dangerous: The mountain has claimed at least 17 lives. We knew we had to be careful, but surprisingly, the danger was part of the attraction. Lucian and I were both longing for a bit of risk.

        We proceeded along the ridge and Lucian moved with such agility and balance. Then suddenly, right in the center of the Knife Edge, we encountered a group of bushes. And that's when a killer bee stung(蜇伤) Lucian. Lucian was pale-faced, and he told me very calmly: "Dad, this is serious. I could die." If this were a novel, the perfectly timed disaster, and my son's calm yet serious remark would be cut by some clever editor. But this was not a novel. It was real life.

        "What's your favorite video game?" I asked my son. He shot me a confused look. I pressed him, asking him again. Unwillingly, he began answering my question—or more accurately, he began asking me why I talked about video games at a moment like this. By the time he finished, a minute had passed. He showed no signs of having an allergic(过敏) reaction. I pointed this out to him. Another minute passed. And then, unexpectedly, we realized, he was totally fine.

        When we returned home, Lucian and I both recounted our adventure—to my wife, his brother, and all the grandparents—until it quickly became a family tale. And it occurred to me that on some level, Lucian and I are both fond of exploring courageously. And this is how we found ourselves at the top of Mount Katahdin, crossing over the Knife Edge.

        It never hurts to put something aside for a rainy day. And not just money can be put in a bank. Blood from donors is routinely banked, too. But three researchers at Harvard Medical School propose going further. They suggest people consider banking deposits of their faeces(粪便), although it still needs more scientific evidence to prove its safety.

        Yang-Yu Liu, Shanlin Ke and Scott Weiss describe their proposal in Trends in Molecular Medicine. Modern life, they observe, is not kind to gut bacteria(肠道细菌). Terrible eating habits; frequent use of antibiotics; diet-changing travel; lack of sleep; even simply living longer; these all affect the complex intestines' ecosystems(肠道生态). That contributes to a range of illnesses, including Clostridioides difficile infections, irritable-bowel syndrome (IBS), inflammatory bowel disease, type 2 diabetes, asthma, cardiovascular problems and colorectal cancer.

        One approach to dealing with some of these has been faecal transplantation. This take shealthy people's faeces and put them into the guts of suffering individuals. It is 80-90% successful at treating C. difficile infections, though only between a quarter and a half of those with IBS gain benefits. At least as interesting are animal studies that put the gut microbes of thin animals in those that are obese. This often causes the recipients(接受者)to lose weight, though it has not yet been tried in people.

        Faecal transplanting is still in its early days. But faeces banks similar to blood bank snow exist in America, Britain, China, France and the Netherlands. As with blood transplants, donations from these need to be matched to a given recipient, otherwise a bad reaction, such as a new infection, may result. But unlike blood-group-matching, faecal matching still lacks scientific evidence.

        Hence researchers suggest that people, when young and healthy, bank their own faeces for future use. They propose establishing facilities where faeces samples will be stored without going bad. Then, if a depositor(储户) needs it in later life, he or she can withdraw part of the account, and make the best of it.

        One nozzle moves back and forth piping red goo(粘稠物) into a rectangle. Another follows adding white layers of a similar substance. The nozzles are labelled "muscle" and "fat". A third, marked "blood", works alongside them. They are part of a machine, developed by an Israeli startup, which can print a steak made entirely of plant-based ingredients.

        This method may seem like something out of science fiction, but what it produces has along history. For hundreds of years humans have sought alternatives to animal milks and meats because they were rare and expensive.

        During the Tang Dynasty, cheese was increasingly brought from Europe and India to China. Little dairy milk was available so the Chinese used the same method as Western cheese makers but substituted(替代) soya milk for cows' milk to create their own "bean cheese": tofu. During the late 19th century this gained, if not popularity, at least a certain acceptance in the West.

        But in America the expansion of the railways, commercial refrigeration and developed farming made meat cheaper and more readily available from the 1880s. In 1896 John Kellogg, breakfast revolutionary, started to sell "Nuttose". Three years later he followed that with "Protose", made by mixing peanuts and wheat. Both were marketed as the "perfect substitute for flesh food". Kellogg's meat substitutes didn't catch on, perhaps be-cause canned, room-temperature, nut-flavored mixture are not appealing enough. Today others are proving more popular. Over 1, 000 different plant-based meat products are available in America according to data from Instacart. Between 2019 and 2020 total sales of plant-based food in America increased by 27%, to $7bn.

        Plant-based food sales are expected to rise even further in part because of concerns about the environmental impact of the world's diet. The global food system currently accounts for 21-37% of human emissions.

        Some people in the rich world are reducing their meat consumption. Nearly 30% of Americans reported eating less meat, according to a recent survey from YouGov. Eating less meat rather than avoiding it will likely drive demand for meat-free products more than strict veganism(索食主义),especially if companies succeed in producing steaks and pork chops in labs, without any involvement from animals.
