“Yu have t tuch the leaves with yur hands t see hw much water shuld be remved,” Fan said. “If t much is remved, the leaves will break int pieces. If nt enugh is remved, the tea will taste bitter (苦涩的).”
This traditinal technique dates back t the Ming and Qing dynasties.
